• 2 eggs
• ½ cup heavy whipping cream
• 1 cup whole milk
• 1/3 cup caster sugar
• 1/3 cup brandy or dark rum
• ½ vanilla pod
• sprinkle of grated nutmeg

Beat eggs until creamy. In a small saucepan, heat sugar with the milk and cream over a gentle heat until you can see steam rising off the surface and some bubbles start to form around the edges of the pan.

Gently whisk the hot milk mixture into the eggs. Add the vanilla and continue blending the eggnog for a minute. Add the brandy or rum. Serve hot in small glasses with some nutmeg freshly grated on top.
